The ridge tiles and edge tiles are a key to preventing water ingress.
Historically ridge tiles were mortared and needed constant maintenance as the mortar cracked due to exposure to ice and extreme temperature fluctuations. Similarly the edge tiles were mortared and prone to cracking.
The modern, no maintenance, solution is Dry Ridge and Dry Verge where the ridge is made from plastic and screwed in place and Verges are screwed in to place.
